Why use organic coffee and then infuse it with gas?

When you think about organic coffee, you think about great tasting and healthy. So, why would you roast the coffee in Natural or LP gas. This infuses it with Hydrogen Sulfide that takes 4 to 5 days of degassing to reduce the toxic gas to a "safe" level for Human Consumption.
